This committed chef, assisted by his partner Cyrielle in the dining room, offers a colourful, plant-based cuisine that varies according to what the land and sea have to offer at any given moment. Although 95% of his produce is sourced locally, Romain Le Cordroch also likes to embellish his recipes with exotic touches brought back from a professional world tour. Of course, at Bvân, you don't know in advance what you're going to eat, but you can expect any combination: parsnip curry, courgettes, chickpeas and whelks; asparagus and Iranian black lemon; reinette apple, parsnip and sorrel...
