Surrounded by a close-knit team, he takes daily pleasure in running his pretty, bright bistro in shades of blue, white and wood. In addition to the rigour of his sourcing, most of which is local, Cédric adds a great deal of sensitivity and deftness of touch to create personal, striking dishes, like this combination of beetroot and gwëll shells. The menu, which is predominantly seafood but far from denying the land, changes every week. And William is always ready to adapt his wine and beer recommendations.
