Lionel Hénaff creates flower-strewn dishes whose delicate flavours and slight tang get it just right. Everything is cooked to perfection, like the wonderful langoustine, crispy at first bite and then deliciously melt-in-the-mouth. Then there's fish with seasonal vegetables, lightly seared octopus, scallops when they're in season, etc.
